WHere is a simplified version of a cocktail found on our latest drinks list. This is a large-volume premix which is loaded full of tastes associated with Christmas time, which makes it ideal for your celebration. Reserve the remaining citrus syrup for breakfast cocktails, sweets, or to mix another batch of the drink.

The Bikini Cocktail

Serves 10 servings

To make the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (makes 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

Making the Citrus Syrup: Combine all the components into a pot, heat until it reaches a simmer, agitating so the sugar melts. Next, turn off the burner and leave to cool down fully. Pour to a sealable bottle, seal and store chilled, it can be stored for about one month.

For the Premix: Mix every liquids in a sizeable container, allow it to infuse for one hour, then filter it preferably using muslin, to ensure it's perfectly clear.

For serving: Pour 85ml of the batch mix to a mixing glass containing ice, gently stirring lightly for about 60 seconds to chill. Filter to a chilled martini glass or equivalent, decorate with some cranberries and finish with a brief mist of mandarin oil above the glass.
